Bran muffins

Overview
Simple but tasty snack which comes together quickly. I first made these in Home Economics class waaaay back when! Makes 24 mini muffins or 12 regular ones (cook for longer).

10 minutes to assemble, 10-12 minutes to bake

Ingredients

10-12 minutes baking time

Ingredients
¼ cup bran
4 TB sultanas
1 cup plain flour
1 ts baking powder

1 egg
½ cup brown sugar
2 TB golden syrup

¾ ts bicarbonate of soda
½ cup milk

Equipment
Muffin tray (24 hole)

Preheat oven to 190° C

1 – Combine bran, sultanas, flour, and baking powder.

2 – Beat egg and sugar until thick. Add golden syrup and beat again.

3 – Blend the bicarbonate of soda with the milk.

4 – Stir all remaining ingredients into the egg mixture. Mix lightly until fairly smooth.

5 – Pour into greased muffin tin, ¾ filling each cup.

6 – Bake at 190 C for 10-12 minutes or until well risen and firm to touch.
