This is one of those recipes that I’d never heard of… then I kept encountering it over and over again! Online, at the supermarket, in restaurants (before lockdown, obviously). And it’s good with salads and even as a way to tart up steamed veggies!! I think coriander would go well in this. Keeps well in the refrigerator too.
½ big bunch of parsley, stems removed
3 spring onions, roughly chopped
1 garlic clove, smashed
1 small or ½ large anchovy
1 TB apple cider vinegar (bought or home made)
2 ts Dijon mustard
1 ts sugar
¾ cup mayonnaise
¾ cup sour cream
80ml lemon juice
1 – Blitz all ingredients except mayonnaise, sour cream and lemon juice in the Thermomix at high speed.
2 – Scrape down sides, then add remaining ingredients. Blitz at high speed until smooth.
3 – Store in jars in the refrigerator.
