Satay sauce

Overview
This is based on a Vietnamese-styled satay dipping sauce with my own extremely un-authentic tweaking. Makes enough for a generous meal’s worth – for roll dipping, over a stir fry or using for skewers.

Time
Comes together really quickly. Giving it a little time to allow the flavours to meld a bit can’t be a bad thing though.

Ingredients
1½ TB smooth peanut butter
2TB hoisin sauce
1½ TB fresh lime juice (or vinegar)
1 TB tomato sauce
1 TB sweetened condensed milk (or caster sugar)
⅓ cup milk
1 clove garlic, crushed
1 ts sweet chilli sauce (or ½ ts samba oelak)

Method
1 – Combine all ingredients in a bowl.

Store leftovers in an airtight container in the fridge.
