Use this for all sushi rice – rolls, nigiri, but also great on its own or as part of a salad. Add black sesame seeds for a bit of fanciness.
These quantities are enough for 3 California rolls.
This uses the absorption method for cooking rice – use it for normal rice by following the instructions up to step 5.
1 cup Sunrice sushi rice
1½ cups cold water
4-6 TB sushi rice seasoning
Optional toasted sesame seeds – black/white
1 – Wash the rice in a sieve under running water.
2 – Place rice and water into a heavy-bottomed saucepan. Bring to a rapid boil.
3 – Cover saucepan, simmer on low for 15 minutes.
4 – Remove from heat, rest for 5 minutes still covered.
5 – Fluff up rice with a fork and tip into a large, flat container or non-metallic pan.
6 – Add the sushi seasoning and mix through, rapidly cooling as you go with a fan or breeze.
