Really quick and easy snack – this can be used for making rumballs (the original recipe) or, if you’re lazy, just press it into a slice mould and cut it up once cold – much easier!
5 minutes assembly, 1-2 hours refrigeration time
1 packet Marie biscuits (or similar), crushed into crumbs
1 cup dessicated coconut
2 TB cocoa powder (I use Callebaut Belgian powder)
1 440g tin sweetened condensed milk
(1 ts rum essence, optional)
Thermomix for making the biscuit crumbs (optional)
1 – Mix all dry ingredients in a large bowl
2 – Make a well in the centre and add the sweetened condensed milk. Mix well.
2½ – Eat as much as you can without feeling sick
3 – Roll into balls, or press into a slice shape. Refrigerate until cold – about an hour or two.
