Creamy Volcano Sauce

Overview
This is a work in progress, using the volcano rolls at Kobe Jones for inspiration.

Time
A few minutes to come together

Ingredients
6 TB Japanese mayonnaise (I use Kewpie)
2 decent squeezes of lime juice
1 ts white sugar
2 ts sweet chilli sauce
1-2 TB cream

Method
1 – Mix all ingredients together in a microwave-proof bowl

2 – Microwave for 30 seconds

3 – Mix well. Use cold in hand rolls, or warm over a mountain of crab hand roll slices with seared scallops.
