Cheesy Béchamel Sauce

Overview
I’m not really a fan of White Sauce or Béchamel Sauce, but pop some cheese in and slap it into lasagne and I’m a very happy camper. Use this as a base for Mac & Cheese if you like, or omit the cheese for the kind of sauce I think ruins vegetables! This recipe uses the Thermomix, so there’s no gruntwork in stirring as the traditional method requires. There’s enough here for 1 regular lasagne with a layer’s worth left over.

Time
9 minutes cooking time (12-15 if recipe is doubled)

Ingredients
50g butter
50g plain flour
70-85g grated tasty cheese
½ ts mustard powder
¼ ts salt
pinch nutmeg
500g milk

Equipment
Thermomix

Method
1 – Place all ingredients in the Thermomix bowl

2 – Set to 90° C and cook on speed 4 for 9 minutes (12-15 if recipe is doubled). Check the thickness and if it’s too runny cook for another 2-3 minutes.
